Travel the Mediterranean coast with lemon seasoned farro, fresh arugula, tomato relish, grilled chicken, and feta infused Upstate Farms® Greek Nonfat Plain Yogurt, spread on a fresh tortilla.

Ingredients
  • 1 cup Upstate Farms® Greek Nonfat Plain Yogurt
  • 1 cup crumbled feta cheese
  • 2 tbsp. olive oil
  • 2 cups cooked farro
  • 3 tbsp. lemon juice
  • 1 1/2 cups pico de gallo
  • 1/2 cup chopped olives
  • 10 flour tortillas
  • 3 cups fresh arugula
  • 10 4 oz. cooked chicken breasts, sliced into quarters

Directions
  1. In a food processor, blend Upstate Farms® Greek Nonfat Plain Yogurt with the feta and olive oil.
  2. Season the farro with lemon juice.
  3. Mix the pico de gallo with the olives.
  4. To build: spread the yogurt feta blend on the tortilla, top with farro, arugula, chicken, and tomato relish.
  5. Roll closed and cut in half on the bias.
