For a perfect on-the-go salad, try this colorful creation of layered black beans and corn salad, romaine, pico de gallo, and quinoa topped with jalapeño spiked Upstate Farms® Greek Nonfat Plain Yogurt.
Ingredients
- 2 cups Upstate Farms® Greek Nonfat Plain Yogurt
- 1 roasted jalapeño: peeled, seeded and roughly chopped
- 3 tbsp. lime juice
- 3 cups shredded romaine lettuce
- 1 1/2 cups cooked black beans
- 1 1/2 cups roasted corn kernels
- 3 cups cooked quinoa
- 3 cups pico de gallo

Directions
- In a blender, mix Upstate Farms® Greek Nonfat Plain Yogurt with the roasted jalapeño and lime juice, then purée.
- To build each salad, layer into a mason jar in the following order: romaine lettuce, black beans, quinoa, yogurt dressing, and pico de gallo.
- Secure each mason jar with a lid. Shake and serve.
