For a perfect on-the-go salad, try this colorful creation of layered black beans and corn salad, romaine, pico de gallo, and quinoa topped with jalapeño spiked Upstate Farms® Greek Nonfat Plain Yogurt.

Ingredients
  • 2 cups Upstate Farms® Greek Nonfat Plain Yogurt
  • 1 roasted jalapeño: peeled, seeded and roughly chopped
  • 3 tbsp. lime juice
  • 3 cups shredded romaine lettuce
  • 1 1/2 cups cooked black beans
  • 1 1/2 cups roasted corn kernels
  • 3 cups cooked quinoa
  • 3 cups pico de gallo

Directions
  1. In a blender, mix Upstate Farms® Greek Nonfat Plain Yogurt with the roasted jalapeño and lime juice, then purée.
  2. To build each salad, layer into a mason jar in the following order: romaine lettuce, black beans, quinoa, yogurt dressing, and pico de gallo.
  3. Secure each mason jar with a lid. Shake and serve.
