Whether it’s a fancy dinner party or a lazy Wednesday night, these crostinis are sure to bring your appetite delight.

Chef Tip: For a more savory crostini, add sautéed mild Italian crumbled sausage or caramelized onions to the mushroom blend.

 

Ingredients

Yield: 780 Crostini | Portion Size: 2 crostini

  • 30 loaves French Bread
  • 35.1 lbs Ricotta Cheese
  • 1 batch Green Goddess Dressing
  • 26.6 lbs Cremini Mushrooms
  • 1 1/4 cups Salt
  • 1 1/4 cups Black Pepper
  • 15 cups Fresh Sage, chiffonade
  • 1 1/4 cups Thyme, dried

 

Directions

  1. Sliced bread into one-inch rounds and toast.
  2. Fold Green Goddess Dressing into ricotta cheese add ¼ cup of salt. Set aside.
  3. Sautee mushrooms with salt and pepper until browned. Add sage, thyme, remaining salt and pepper.
  4. Smear 1-2oz Green Goddess Ricotta onto toasted French bread and top with sautéed mushrooms.
