Chef Tip: For a more savory crostini, add sautéed mild Italian crumbled sausage or caramelized onions to the mushroom blend.
Ingredients
Yield: 780 Crostini | Portion Size: 2 crostini
- 30 loaves French Bread
- 35.1 lbs Ricotta Cheese
- 1 batch Green Goddess Dressing
- 26.6 lbs Cremini Mushrooms
- 1 1/4 cups Salt
- 1 1/4 cups Black Pepper
- 15 cups Fresh Sage, chiffonade
- 1 1/4 cups Thyme, dried
Directions
- Sliced bread into one-inch rounds and toast.
- Fold Green Goddess Dressing into ricotta cheese add ¼ cup of salt. Set aside.
- Sautee mushrooms with salt and pepper until browned. Add sage, thyme, remaining salt and pepper.
- Smear 1-2oz Green Goddess Ricotta onto toasted French bread and top with sautéed mushrooms.
