Ingredients
  • 1.5 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup Upstate Farms® Lowfat Buttermilk
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 cup powdered sugar
  • 2–3 tbsp lemon juice
Instructions
  • Step 1: Preheat oven to 350°F. Grease a loaf pan.
  • Step 2: Cream butter and sugar until fluffy. Add eggs one at a time.
  • Step 3: Mix in vanilla, lemon zest, and lemon juice.
  • Step 4: In another bowl, combine flour, baking powder, and salt.
  • Step 5: Add dry ingredients to wet in batches, alternating with buttermilk.
  • Step 6: Pour into pan and bake for 45–55 min. Cool and glaze.
