Wild Atlantic salmon is smoked and then sliced thin atop roasted fennel, mixed greens, and radish, drizzled with an Upstate Farms® Sour Cream and red wine vinegar dressing.

- 1 1/2 cups Upstate Farms® Sour Cream
- 4 tbsp. red wine vinegar
- 8 cups mixed greens
- 2 cups thinly sliced fennel, roasted
- 1 cup radish, diced
- 16 oz. smoked salmon
- Salt and pepper, to taste

Directions
- In a large mixing bowl, whisk together Upstate Farms® Sour Cream and red wine vinegar. Season with salt and pepper, to taste.
- Portion out mixed greens onto plates and top with fennel, radish, and smoked salmon. Drizzle with sour cream dressing.
