Ingredients
- 1.5 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 eggs
- 1/2 cup Upstate Farms® Lowfat Buttermilk
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1 cup powdered sugar
- 2–3 tbsp lemon juice
Instructions
- Step 1: Preheat oven to 350°F. Grease a loaf pan.
- Step 2: Cream butter and sugar until fluffy. Add eggs one at a time.
- Step 3: Mix in vanilla, lemon zest, and lemon juice.
- Step 4: In another bowl, combine flour, baking powder, and salt.
- Step 5: Add dry ingredients to wet in batches, alternating with buttermilk.
- Step 6: Pour into pan and bake for 45–55 min. Cool and glaze.
