Caramelized onions, bell peppers and jalapeños are served over a bed of quinoa and topped with Upstate Farms® Greek Nonfat Plain Yogurt infused with Tex-Mex spices, your choice of scrambled eggs or egg whites, diced avocado and cilantro with a side of lime wedges.

Ingredients
  • 1 cup Upstate Farms® Greek Nonfat Plain Yogurt
  • 1 tbsp. southwest seasoning
  • 1 tbsp. olive oil
  • 1⁄4 cup white onions, sliced
  • 1⁄2 cup red and green bell peppers, sliced
  • 1 jalapeño, small diced
  • 2 cups quinoa, cooked
  • 4 large eggs or egg whites, scrambled
  • 1 avocado, sliced
  • 2 tbsp. cilantro, chopped

Directions
  1. In a small bowl, combine Upstate Farms® Greek Nonfat Plain Yogurt and southwest seasoning and set aside.
  2. Heat olive oil in a nonstick sauté? pan over medium heat and cook onions, peppers and jalapeños until soft, about 5 to 7 minutes.
  3. Place quinoa into 4 bowls and top each with the pepper mixture, scrambled eggs, 1/4 of sliced avocado, cilantro and a dollop of Upstate Farms® Greek Nonfat Plain Yogurt. Serve.
