This Cajun classic featuring tomatoes, peppers and zucchini is simmered in a rich broth with Upstate Farms® Greek Nonfat Plain Yogurt and served with brown rice.
Ingredients
- 12 1/2 lbs. Upstate Farms® Greek Nonfat Plain Yogurt
- 2 gal. unsalted chicken stock
- 2 cups onion, frozen, diced
- 2 cups green pepper, frozen, diced
- 1 cup celery, frozen, diced
- 1 tbsp. cajun seasoning
- 4 cups canned tomatoes, diced
- 3 lbs. brown rice
- 5 lbs. chicken, cooked, diced

Directions
- In a large pot or steam kettle, combine stock, onions, peppers, celery and Cajun seasoning.
- Bring to a boil, reduce heat and simmer for 10 minutes.
- Add rice and chicken. Return to a simmer, cover and cook for 20 minutes or until rice is tender.
- Stir in yogurt and return to a simmer. Serve.
