This Cajun classic featuring tomatoes, peppers and zucchini is simmered in a rich broth with Upstate Farms® Greek Nonfat Plain Yogurt and served with brown rice.

Ingredients
  • 12 1/2 lbs. Upstate Farms® Greek Nonfat Plain Yogurt
  • 2 gal. unsalted chicken stock
  • 2 cups onion, frozen, diced
  • 2 cups green pepper, frozen, diced
  • 1 cup celery, frozen, diced
  • 1 tbsp. cajun seasoning
  • 4 cups canned tomatoes, diced
  • 3 lbs. brown rice
  • 5 lbs. chicken, cooked, diced

Directions
  1. In a large pot or steam kettle, combine stock, onions, peppers, celery and Cajun seasoning.
  2. Bring to a boil, reduce heat and simmer for 10 minutes.
  3. Add rice and chicken. Return to a simmer, cover and cook for 20 minutes or until rice is tender.
  4. Stir in yogurt and return to a simmer. Serve.
