This classic side dish is given a boost of protein and nutrients with Upstate Farms® Greek Nonfat Plain Yogurt, carrots, onions and celery.
Ingredients
- 12 1/2 lbs. Upstate Farms® Greek Nonfat Plain Yogurt
- 1 cup Dijon mustard
- 1/4 cup Salt
- 3 tbsp. Black pepper, ground
- 1/2 cup Parsley, dried
- 1/2 lb. Onion, frozen, diced, thawed and drained
- 1/2 lb. Celery, frozen, diced, thawed and drained
- 15 1/2 lbs. Potatoes, frozen, pre-cooked, thawed

Directions
- In a large bowl, combine Upstate Farms® Greek Nonfat Plain Yogurt with Dijon mustard, black pepper, salt and parsley. Stir to combine.
- Add the remaining ingredients and mix well until evenly distributed.
- To serve, portion 1 cup of potato salad into a bowl.
