Whole wheat bread is piled high with chicken salad that’s full of fresh vegetables, roasted chicken and Upstate Farms® Greek Nonfat Plain Yogurt.

Ingredients
  • 12 1/2 lbs. Upstate Farms® Greek Nonfat Plain Yogurt
  • 1/4 cup. dijon mustard
  • 2 tbsp. black pepper, ground
  • 3 tbsp. salt
  • 1/4 cup parsley, dry
  • 1/4 cup chives, dry
  • 1/4 cup lemon juice
  • 10 lbs. chicken, frozen, diced, thawed and drained
  • 1/2 lb. onion, IQF, diced, thawed and drained
  • 1/2 lb. celery, IQF, diced, thawed and drained
  • 100 slices whole wheat bread

Directions
  1. In a large bowl, combine Upstate Farms® Greek Nonfat Plain Yogurt with Dijon mustard, black pepper, salt, parsley, chives and lemon juice. Stir to combine.
  2. Add in the remaining ingredients and fold with a spatula to combine.
  3. To serve, spoon 1 cup of chicken salad between two slices of wheat bread.
