Whole wheat bread is piled high with chicken salad that’s full of fresh vegetables, roasted chicken and Upstate Farms® Greek Nonfat Plain Yogurt.
Ingredients
- 12 1/2 lbs. Upstate Farms® Greek Nonfat Plain Yogurt
- 1/4 cup. dijon mustard
- 2 tbsp. black pepper, ground
- 3 tbsp. salt
- 1/4 cup parsley, dry
- 1/4 cup chives, dry
- 1/4 cup lemon juice
- 10 lbs. chicken, frozen, diced, thawed and drained
- 1/2 lb. onion, IQF, diced, thawed and drained
- 1/2 lb. celery, IQF, diced, thawed and drained
- 100 slices whole wheat bread

Directions
- In a large bowl, combine Upstate Farms® Greek Nonfat Plain Yogurt with Dijon mustard, black pepper, salt, parsley, chives and lemon juice. Stir to combine.
- Add in the remaining ingredients and fold with a spatula to combine.
- To serve, spoon 1 cup of chicken salad between two slices of wheat bread.
