Roasted chicken, fresh vegetables and brown rice are served in a creamy chicken broth fortified with Upstate Farms® Nonfat Plain Yogurt.
Ingredients
- 12 1/2 lbs. Upstate Farms® Nonfat Plain Yogurt
- 2 gal. unsalted chicken broth
- 2 cups onions, frozen, diced
- 1 cup carrots, frozen, diced
- 1 cup celery, frozen diced
- 1/4 cup parsley flakes, dried
- 1 tbsp. onion powder
- 1 tbsp. garlic powder
- 1 tbsp. salt
- 3 lbs. brown rice
- 5 lbs. chicken, cooked, diced

Directions
- In a large pot or steam kettle, combine chicken broth, vegetables, herbs and spices.
- Bring to a boil, reduce heat and simmer for 10 minutes.
- Add rice and chicken. Return to a simmer, cover and cook for 20 minutes or until rice is tender.
- Stir in yogurt and return to a simmer. Serve.
