A cold and refreshing smoothie bowl with a crunchy and delicious topping.

Chef Tip: Add coconut flakes or a nut butter as a topping to the smoothie bowl.

 

Ingredients

Yield: 48 servings

Peanut Butter Granola:

  • 20 cups Old Fashioned Oats
  • 3 1/3 cups Sliced Almonds
  • 3 1/3 cups Chopped Peanuts
  • 1 1/4 cups Chia Seeds
  • 2 1/2 cups Agave Syrup
  • 5 cups Unsweetened Peanut Butter
  • 1/4 cup Kosher Salt
  • 1/2 cup of Vanilla Extract

Garnish:

  • Sliced Banana (as needed)
  • Shaved Dark Chocolate (as needed)

 

Directions

Peanut Butter Granola:

  1. Combine oats, almonds, peanuts, and chia. Set aside.
  2. Melt peanut butter and agave together in a saucepan. Once melted, add salt, and vanilla then pour over oats.  Mix until well covered.
  3. Spread granola in a single layer on an oiled sheet tray and bake for 30 minutes at 300°F. Then allow to cool.

Smoothie Bowl:

  1. Pour 1 c of Berries and Cream Smoothie into a bowl.
  2. Top with ½ c granola, bananas, and shaved dark chocolate.
